Secrets of the process:

  • • Enzymatic transformation: Natural enzymes break down muscle fibers, making the meat tender like butter.
  • • Flavor concentration: Meat loses up to 30% water. This is the price of the "angel's share" for the rich, nutty taste.
  • • Umami explosion: Natural glutamate levels rise up to 10 times after the 30th day.
